Hi, My father is over 55 years old, I’m 27 and single/unmarried. If my father makes the investment, will I be eligible for the F2 visa well? Furthermore, after 5 years, can I apply for PR or citizenship alone without my father letting him withdraw the investment back? Thanks.

Yes if you are unmarried then you can get a f2 visa with your father
 
After 5years 
Your father has to get a PR visa

But citizenship requires korean language skill

You can apply for the citizenship as soon as you get the F5 visa
 
Your father has to transfer around 210,000 USD = 300,000,000 won ( current rate )
 
and also has to provide another 210,000 USD to prove your father has enough fund to live in Korea without working
